Forest Asparagus or Ornithogalum Asparagus

Ingredients:

250g of forest asparagus

200g of cherry tomatoes

Sunflower oil

Cider vinegar

Salt and pepper

 

Step 1: Wash the forest asparagus and trim the ends of the stalks. There is no need to peel them.

Step 2: Bring a large pot of water to a boil over high heat. Add salt to the water.

Step 3: Place the forest asparagus in the simmering water and cook for 4 to 5 minutes.

Step 4: Immediately after cooking, transfer the asparagus to cold water to stop the cooking process.

Step 5: Place the blanched asparagus on a paper towel to absorb excess moisture and set aside in a cool place.
