Sea Urchins

Before they can be consumed, sea urchins must be prepared. You can ask your fishmonger to open them for you, but in this case you will have to eat them very quickly.

If you want to eat them a little later, take a pair of gloves and scissors and open the sea urchin by first inserting the tip of the scissors into its mouth. Then cut the shell and open it into two parts.

Remove the animal's digestive system and remove the coral using a small spoon.
